Combine polenta, flour, baking powder, soda, sugar and salt.
Add egg and milk. Beat until smooth. Stir in onions, corn and butter.
Cook on med hot griddle in 1/4 c. portions, spacing slightly apart. Cook until edges look dry, turn and brown bottoms, 2-3 min.
Serve as cooked, or arrange in single layer on racks on baking sheets and keep warm in 150? oven up to 15 min.
Serve w/chipotle sauce.
