These are the classic Polish potato pancakes, or "kartoflane placki" as the Poles say. Easy to make and delicious.
Squeeze and poor out excess moisture in the grated potatoes. Add the ingredients and beat well. Heat oil in skillet. With spoon, drop mixture in hot oil and spread as thinly as possible. Fry on both sides.
Drain pancakes on absorbent paper. Serve with sour cream or syrup.
