Chicken with Squash
Place strips of chicken breast in bowl. Combine spices and toss with chicken breasts. In a large skillet heat oil to medium high heat and brown chicken thoroughly. Add onion and pepper strips. Add Zucchini. Cook for about 10 minutes and add tomatoes. Lower heat and simmer for one hour. Serve over rice.
