Rosemary Roasted Whole Chicken (Rotisserie)
Strip leaves from 2 rosemary sprigs.
Combine rosemary leaves, garlic, dijon mustard, lemon juice, olive oil, wine/beer (optional) and blend in cuisinart till creamy.
Clean & rinse chicken inside & out. Rub herb mixture into chicken cavity
Pour remaining herb mixture into large zip lock freezer bag insert whole chicken, seal bag and rub mixture over chicken thoroughly.
Let marinate at least 1 hour in refrigerator.
To prepare for Rotisserie tie remaining rosemary sprigs around chichen while securing legs tighly against bird
Insert onto rotisserie and cook till golden brown
Cooking Time on HOT Rotisserie: ~~at; Sea Level 1 hour ~~at; altitude 1.5 hours
