Heat the oil in a dutch oven or large skillet. Saute the onion over medium heat until golden. Stir in the sauce and seasonings, add chicken breasts. Cover and simmer for 25 minutes.
Remove chicken to a cutting board. Using two forks, coarsely shred the chicken and add it back to the pot. Stir to combine, and cook uncovered for 10 minutes.
