Ground beef is used instead of cubed beef for a more tender version. This preparation is our version of beef stroganoff and has been handed down over the years.
We prefer to sweat the water out of mushrooms prior to adding them to dishes such as this. If you like the water in mushrooms, omit the first step and add the mushrooms after browning the meat and onions.
In a dutch oven over medium high heat, add mushrooms to a dry hot pan. Reduce mushrooms heating water out of mushrooms. Once mushrooms have the water evaporated out and are reduced, transfer mushrooms to bowl for later use.
In the same dutch oven over medium heat add a touch of olive oil, lightly brown onion and garlic, then add ground beef and brown. Remove excess oil/water from pan. Add tomato paste, stir to mix well. Add soup plus one can of water (mixing to remove any remaining soup concentrate), mix well. Add Worcestershire sauce and sherry, mix well.
Allow mixture to simmer on low for at least 15-20 minutes. During this time cook your noodles or rice. About 5 minutes before service, add the sour cream, mix well.
Add noodles to plate, spoon mixture over the noodles, enjoy.
The golden mushroom soup is important for flavor, cream of mushroom does not provide enough flavor.
