Perfect for a family dinner plus leftovers! Pounded chicken rolled with spinach, garlic, olive oil and mozzarella makes for a delicious and fulfilling dinner. Just add a side and it makes for an easy baking dinner.
Start out by settjng aside a mixing bowl, sheet of wax paper, a pounder, 1 large pyrex and ingredients. Set oven to 375• Take the pyrex and put a small layers of your vodka sauce to just cover the bottom of the dish. then wash chicken and cut off any unwanted fat/tendons and cut in half. then take wax paper and set onto a stable/ Hard surface And pound chicken till slightly thinner, set aside or into large Pyrex. Add seasoning to chicken while set aside, salt, pepper and garlic powder.
Take organic spinach and wash. Cut of stems and cut into fours. Set aside spinach into the large mixing bowl.
Mince garlic cloves add to spinach. Then add olive oil(3 tblsp) and pinch of salt, pepper and garlic powder.
Remember you must season anything prepped separately because otherwise it shares the smaller amount leaving your dishes with less flavor! We are cooks, Flavor is our middle name!
Now the good stuff. Take the spinach stuffing(Popeyesstrength) about a big pinch in the middle and roll the chicken and place into dish. Then take sliced provolone and lay two slices per chicken breast and put the remaining sauce on top and place into over. Enjoy a glass a wine while you wait! I added Brussel sprouts soaked in honey and balsamic as my side, but be creative that's the best part about cooking!
Cook for 40-45 min and enjoy!
