lovely fluffy mini popovers- so yummy
preheat oven and pan to 450 degrees.
Whisk together milk eggs and 2 tablespoons of butter in a medium bowl.
Add flour and salt stirring until fluffy, combined and smooth.
Remove pan from oven and coat wells with remaining butter.
Spoon the batter into each well, filling 3/4 full.
Bake the popovers on the middle rack in the oven for 15 minutes.
After the 15 minutes, turn oven temperature down to 350 degrees and bake for an additional 15 minutes. DO NOT REMOVE THE PAN OR OPEN OVEN DOOR!
Remove from oven and pierce each popover a few times to release the steam.
Best when served right away.
