Put rack in lower third of oven and preheat oven to 375 degrees. Generously butter popover cups.
Whisk together egg and milk in medium bowl. Add melted butter, whisking ingredients. Add flour, sugar and salt and whisk until batter is well combined but still slightly lumpy.
Divide batter among the six popover cups. Bake 40 minutes (don't open oven door during this time!) until popovers are puffed and pale golden.
With a small sharp knife, cut a 1/2-inch slit in top of each popover to allow steam to escape. Bake until golden brown, about 10-15 minutes longer. Serve immediately.
The popovers should sound slightly hollow if you tap on them. Try a variation... add a small amount of grated parmesan to the tops of the popovers before baking.
