Place chicken in a pot, cover with water and add the salt. Bring to a rapid boil for 10 minutes then reduce heat to simmer and cover for 45 minutes. Remove chicken to a plate to cool. When the chicken has cooled pick the meat from the bone and place in a 8 inch oven safe casserole dish.
Preheat the oven to 350?
In a bowl mix together the sour cream and the mushroom soup. Spread this mixture over the top of the chicken in the casserole dish. Put the butter in a large microwave safe bowl and melt it in the microwave. Gently crush the Ritz Crackers INSIDE the tube, being careful not to tear the wrapper, then empty the package into the melted butter. Add the poppy seeds and blend gently together. Scoop this mixture onto the top of the ingredients in the casserole and spread to cover the top.
Bake in the oven for 45 minutes.
*Rice is a good side dish to this as is steamed brocolli.
