French dish local to the south west.
This is my own version.
Cut the pork into large chunks and brown in the oil
Peel the garlic but leave whole.
Peel and finely chop the onion.
Add the onion, garlic, half the prunes and seasoning to the pork.
Add a handfull of fresh sage.
Add the wine and top up with water to cover.
Cook in a slow cooker or slow oven for 2 1/2 hours.
Top up with more water at intervals if necessary.
Add the rest of the prunes and cook for a futher 1/2 hour.
Stir in the cream before serving.
Serve with green beans and broken boiled potatoes.
Potatoes: boil the potatoes whole for 20 minutes. Drain well. Gently fry a chpped leek and add potatoes, crushing them slightly as you stir them in.
The first of the prunes will melt into the sauce well. The second lot can be left out when serving if required.
The garlic will also melt into the sauce.
All the prunes are necessary for the dish as the sauce is sweetened by them. Use stoned Agen prunes for the best results.
This is a delicious dish for dinner parties and friends. Everyone takes home the recipe.
