Custom Porcini Congee
In frying pan, warm some oil and butter, sautez the dried soaked mushrooms for 3 min, add fresh mushrooms until liquid are spent add onion, garlic, tarragon a pinch of thyme, salt pepper.... Deglaze the pan with the reserved soaking mushroom liquid, simmer 2 min, and Transfer to large stock pot .
Add the water and the bouillion cube, add chopped parsley, Bring to a boil, add cooked rice and alfredo sauce, simmer for 40 min for the rice to go a bit mushy. Adjust flavors, and thickness add fresh scallions.
Even better the next day!
Other versions: Lobster mushroom with dry lobster powder to add extra flavor; or fresh pine mushrooms and dried pine powder... Add cilantro and a drop of sesame oil and thinly slivered fresh ginger roots for that one
Cook the rice the day ahead, keep in zip lock or jar, add extra broth to rice container to soften the rice. Make 2x as much...and enjoy your congee a few days later again...
