Recipe from June Pace. Another childhood dish.
Shape meatballs. Roll in rice and place in frying pan and add can of tomato soup. Cover and let simmer 1 hour. That is the extent of the written recipe. Other recipes for Porcupine Meatballs call for 1 to 1-1/2 lbs. beef (and omit the bread), 1/4 to 2/3 cup rice, 1/2 to 1 cup water (added at the same time as the soup), 1/4 cup minced onion, and for seasonings: salt, pepper, garlic powder, and 1-2 tsp. Worchestershire sauce. One recipe calls for tomato sauce instead of tomato soup. Most other recipes have you mix the rice in with the other ingredients instead of rolling the meatballs in rice. These are meant to be small, bite-sized meatballs.)
