Great, hearty stew, especially in the fall with the yams and corn. Pork Loin can be used, but has very litte fat and can get dry. I prefer to use a pork shoulder (Boston Butt) and trim it well when cutting into pieces to cook. Gives much better flavor and is perfect for slow cooking.
