reduce heat to medium
add onion, garlic and cook until softened.
Add pork with cider and and stock, reduce heat and simmer, covered, for 1 hour
Uncover and cook for 15 minutes. Add potato, sage, salt and pepper and cook until potato just tender (approx 15 min).
Remove from heat and stir through the apple.
Preheat oven to 200C. Spoon mixture into pie dish. Cover with pastry, trim edges, brush with eggwash.
Bake for 20-25 minutes or until golden.
