Warm up olive oil in a cast iron skillet
Sweat out peppers onions with salt and sugar until translucent and droopy
Add basil, cook until warmed up
Place in a covered bowl
Part II - Chop
Heat up cast iron skillet with olive oil
Add pork chop laying away from you
Add thyme and garlic
Baste in butter
Cook 3 1/2 - 4m on each side
Cover and let them rest for 5 mins
Part III - Serve
Place peppers on plate and chop on top
Garnish with the garlic and thyme
