Season the pork chops on both sides with salt and pepper. In a large skillet over medium heat, add the oil and butter.
When the oil is hot, place 2-3 chops in the oil. Cover and cook 5 - 6 minutes on the first side, or until you start to see the bottom edge of the chop turning golden brown. Flip and cook for another 3 -4 minutes or until the juices run clear and the chop is browned to your liking. (Note: If a bubble forms in the pork chop, use a meat fork and knife to cut from the outer edge to the center of the bubble. This allows the pork chop to lay flat.)
Remove from skillet and place on a platter. Repeat the process with the remaining pork chops. Serve hot.
