Tender pork chops in creamy smooth sauce.
Sprinkle both sides of pork with salt an pepper. Cut a small slit in the fat edge of of the pork chop to keep it from curling during cooking.
Heat a large skillet, coated with cooking spray, over medium-high heat. Add pork chops to skillet and cook 3-4 minutes, until pork chop releases easily.
Turn pork chops and cook and additional 3-4 minutes, or until cooked to taste.
Remove chops from pan and keep warm.
Add broth to the skillet and scrape the bottom to loosen bits.
Combine half and half and the mustard in a bowl, and add to the broth in the pan.
Reduce heat and cook for about 7 minutes, until it thickens a bit.
Spoon sauce over the pork chops.
