Suggest a better description1. Coat the pork with the marinade ingredients and set aside in the fridge from 15 mins - 1 hour.
2. Blend pesto ingredients together in a food processor and set aside.
3. Roast or char-grill the vegetables then toss with half of the pesto.
4. Grill the pork cutlets for 8-10 minutes, turning once, until golden brown and cooked on the inside.
5. Serve on a plate together with the remaining pesto in a small jug.
