Substitute any meat and add whatever veggies you prefer.
Heat 1 1/2 tablespoons of oil in wok. add pork, salt and stir-fry 3 to 5 minutes over high heat. Add mushrooms, scallions, and beansprouts, and continue to stir-fry for 2 to 4 minutes. Add half of the soy sauce, sherry , sugar and pepper and stir-fry a further 2 minutes. Remove from wok with slotted spoon. Add the remaining oil and soy sauce to the wok. Add noodles to the wok and toss in soy oil gravy. Add pork and veggies back to pan and cook for an additional 2 minutes. If needed add additional soy sauce, sherry and oil and stir-fry and heat for 1 minute. Serve right away.
