-Bring roast to room temp before cooking, about 45 minutes standing outside the refrigerator
-Preheat oven to 400 degrees start convection fan after 10 minutes
-Cut crosswise slices in the fat on the top of the roast, but do not cut into meet
-Rub with oil or melted unsalted butter
-Rub with sea salt, freshly ground pepper, minced garlic and desired spices
-Cook at 400 for 18 minutes a pound or until a meat thermometer reaches 145 F
-Remove from oven and let rest 20 minutes before slicing to allow juices to permeate the roast
