Suggest a better descriptionSlice pork loin into 1/4 inch medallions
Combine egg beaters (or eggs) ,Parmesan cheese, salt and pepper
Flatten medallions, dust with flour and dip in egg mixture.
Brown medallions in skillet with 2 tbsp olive oil 3-4 minutes on each side, then remove from pan.
Combine 1 tbsp olive oil, broth, vinegar, wine, oregano, pepper and garlic. Cook over medium heat 20 minutes to allow liquid reduction.
Mix cornstarch and water thoroughly. Add to pan and mix well until sauce thickens. Salt and pepper to taste.
Add pork medallions to sauce and simmer on low heat.
Prepare gnocchi according to directions, drain and add to meat and sauce.
