MISE EN PLACE: Preheat (convection) oven to 150°C (300°F); Peel and core apple; Slice apple and brie into 6 slices
1) Brown pork medallions in a pan.
2) Cover a shallow baking pan with parchment paper and lay down two slices of bacon crosswise. Salt and pepper each medallion before placing it in the middle. Cover pork with a slice of brie, then apple and wrap the "package" with bacon ends. Repeat for all medallions.
3) Bake (2nd from bottom) 15 minutes.
If using conventional oven, adjust to 160°C (325°F) and 20 minutes.
