Fry sausages to brown on all sides. Set aside.
In a deep frypan, add oil and then onions, saute for 10 minutes allowing them to become transparent begin to brown. Sprinlke with balsamic vinegar and continuing cooking, stirring from time to time. Stir in flour and cook 1 minute, then slowly add dark beer, chicken stock and thyme. Lower heat to simmer and allow to thicken. Gravy should be thin but not soupy.
Set sausages in to the gravy and simmer on low heat for 15-20 minutes.
Season with salt and pepper.
Serve with crusty bread or pumpkin mash.
