Preheat Oven to 350
Trim fat from pork. Heat skillet with Olive Oil. Place Tenderloin in skillet and sear on all sides, so that only the outside of the tenderloin looks cooked.
Then place tenderloins into a baking dish. Poke holes in the tenderloins all over and cut whole garlic into pieces adn place a sliver of the whole garlic into each hole.
Combine mustard, honey, chopped rosemary, chopped thyme and black pepper in a bowl; brush over pork.
Wrap each pork tenderloin in thyme using the garlic holes to support the sprigs.
(I normally make 2 times the amount of baste because it seems to run out the second time of basting).
Bake at 350 degrees for 50 minutes or until thermometer registers 160 degrees (Slightly pink). Baste the pork every 10-15 minutes for best taste.
Remove from oven and let rest for 10 minutes before slicing.
