Pork pie that utilizes left over stuffing from Thanksgiving or Christmas if you have it.
2 - 9 inch crusts pie pastry * follows
1. In a saucepan, saute onion and garlic in bacon drippings until light brown. Add ground pork. Cook until light brown, stirring until crumbly; drain. Stir in broth, salt and pepper. Cook for 10 minutes or until liquid is nearly absorbed. (add more if wanted)
Add spices, parsley and stuffing, mix. Cool to room temperature.
2. Spoon filling into pastry lined 9 inch deep dish pie plate. Top with remaining pastry; seal edges and cut vents. Brush with cream.
3. Bake at 425 degrees F (220 degrees C) for 20 minutes. Reduce temperature to 350 degrees F (175 degrees C). Bake for 20 to 30 minutes longer, or until golden brown. Serve warm or cold.

English Pastry for meat pie
Sift together
2 cups sifted flour
2 teaspoon baking powder
1 teaspoon salt
Mix well and stir in until it holds its shape
2/3 cups shortening (i use cold bacon drippings)
1 tablespoon lemon juice
1 egg yolk (you can use the egg white to paint the top crust)
up to 1/2 cup hot water
Chill. Pat out 3/4 pastry as bottom crust, cover with the rest of the pastry.
You may roll it out if you wish or just push it into the pan.
