Suggest a better descriptionSeason pork with salt. In a medium-large cast iron pan heat the oil, until just starting to smoke. Add the pork and brown on all sides. If you have a pork bone, add it in now. Move the pork and bone to a soup pot. Add onion to the cast iron pan and saute until softened, showing a bit of caramelization. Move the onion to the soup pot, and turn the soup pot's heat to medium-high. Add garlic, and paprika, cook, stirring for a minute.
Stir in sherry and cook until starting to reduce, 5 minutes give or take. Add marinara, pork stock, and season with salt and pepper to taste. Bring to a boil, then reduce heat and cover, simmer for 1 hour.
To serve, ladle soup into bowls, dollop on creme fraiche and sprinkle with marjoram leaves.
