Suggest a better descriptionPreheat oven to 350 degrees. In a large stock pot, over low flame, heat oil until smoking. Add meat and using long tongs or heavy serving forks, turn it carefully, making sure all sides are browned. this will take almost 10 min
Remove meat and set aside. Add onions, carrots and celery to the pot. Stirring frequently, brown vegetables. return meat to the pot with vegetables. Return meat to the pot with vegetables, add liquids, tomato paste and bring to boil. This will take anywhere form 8 to 12 min. Place bay leaves in liquid, cover pot tightly and carefully place it in preheated oven.
Cook for two hours, then remove pot from over, stir in potatoes and return to oven for 30-45 min or until potatoes are tender.
Remove pot from oven and transfer meat and vegetables to overproof serving platter. Turn off oven and place platter of meat and vegetables inside to stay warm.
Carefully place pot with cooking liquid on top of stove over medium flame, bring liquid to a boil. Add the asparagus and cook for 4 to 6 minutes or until asparagus is done but still a little crisp.
Remove warm serving platter from oven and place asparagus around pot roast and other vegetables. Salt and pepper cooking liquid to taste, then ladle it as gravy over meat and vegetables. Serves 6 to 8
