Perfect cold weather meal
Heat oven to 300 degrees.
Season with salt, pepper, garlic powder and whatever else you want to use as seasoning.
Heat a large pot/roasting pan add the oil. Brown the roast about 5 minutes per side.
Add about half the beef broth, onion and bay leaves. Cover, put in the oven, leave it for about 3 hours.
About an hour before you want to eat add the rest of the beef broth, whole peeled potatoes, if you are using big carrots put them in now.
If you are using baby carrots and mushrooms wait a half hour before adding.
Leftovers are great shredded with BBQ sauce.
