Dumplings, fried and steamed
. Sift the flour and salt for the dumpling pastry into a lg bowl and make a well in the center. Pour in the oil and add enough boiling water to make a liable dough. Add about 1/4 C of water at first and begin stirring with a wooden spoon to gradually incorporate the flour. Add more water as needed. Knead the dough for about 5 min and leave to rest for 30 min. Divide the dough into 12 pieces and roll each piece into a circle about 6" in diameter.
. Mix all the filling ingr together and place a mound of filling on half of each circle. Fold over the top and press edges together firmly. Roll the joined edges over using a twisting motion and press down to seal. Pour about 1/8" of oil into a large skillet. When hot, add the dumplings, flat side down and cook till well browned.
. When underside is brown add about 1/3 c water and cover tightly, cooking gently for about 5 minutes or till the top side looks cooked. Serve immediately.
