1. Fill pot with water and heat to boiling. Peel and cut potatoes in quarters then place in boiling water and boil until fork goes through potato easily.
2. Remove potatoes, place in bowl, and mash. Place bowl in freezer for about 5 minutes or until potatoes have cooled a bit. Add the cottage cheese and egg, then salt and pepper to taste.
3. Spoon filling into pierogi noodles.
This recipe is big so you can definitely reduce the size, because 1 full recipe of this filling needs about 2.5-3 batches of the pierogi noodles to use all the filling. Also this filling can be made ahead of time and stored in the fridge until used.
