Filling, great value, healthy and very tasty
Heat crock pot with stock and 3 - 4 cups of water. Boil potatoes in a large saucepan on stove. Fry onions, garlic and bacon until bacon is browned and onions are caramelised. Add onion, garlic, bacon and parsley to crock pot. Season with salt and pepper to taste. Once potatoes have boiled for about 10 - 15 minutes add to crock pot. Cook on high for 2 hours. Mash or blend Potato toddesired texture and cook on low for another hour and half. When ready to eat add sour cream to taste and stir well. Serve with crusty bread.
Easy to make. Boiling the potatoes first ensures they are soft and reduces cooking time required. To save washing a pan, heat oil in saucepan and cook the onion and bacon in it. Then use the saucepan to boil the potatoes.
