Egg, bacon, cheese and potato casserole
Cover frozen hash browns with hot water. Let stand 10 min. Drain well. Squeeze out excess water. Beat eggs, add potatoes and remaining ingredients except bacon and paprika. Pour mixture into a buttered pie pan or an 8 x 8 casserole. Sprinkle with bacon and paprika. Cover with plastic wrap and refrigerate overnight.
Place cold pie pan, uncovered, in cold oven. Bake at 350 for 35 min. or until eggs are done.
Great Christmas morning or for a brunch.
Recipe can be doubled and put in a 9 x 13.
