Great weeknight, tasty family meal!
1. Preheat the oven to 375 degrees. Lightly grease a baking tray and heat in oven for 5 minutes.
2. Meanwhile, in a shallow bowl, stir together parmesan, salt, pepper and sage. In another shallow bowl, beat eggs with 1 tablespoon water. Place instant mashed potatoes in a third bowl. dip chicken into parmesan mixture, pressing it in well. Dip chicken into egg mixture, then into mashed potatoes, pressing on well.
3. Place chicken on heated baking tray; drizzle olive oil over chicken. Bake for 10 minutes, then turn chicken over and bake for another 10 to 15 minutes, or until coating is crusty and golden brown and chicken is cooked through.
