A very hearty soup. Rich in flavour. A family favorite.
Cook bacon in small skillet over medium-low heat for 5-7 minutes or until browned and crisp. Drain on paper towel and set aside. Combine stock, garlic, potatoes, celery, salt and pepper in large pot and bring to low boil. Simmer for 15-20 minutes or until potatoes are tender. Remove from heat and puree until smooth. Return pot to stove over medium heat and stir in cream. Simmer for 5 minutes to incorporate flavours. Just before serving, stir in dill. Garnish each bowl with bacon.
*Delicate Dill. Don't add fresh dill to cooked dish until just before serving. Dill loses its flavour and colour in hot food if it sits for too long.
I like to add the bacon after it's pureed and cooked a little longer so that the bacon flavour is stonger but that is just our family preference.
