Add egg to potatoes, mix well with a spoon. Mix baking powder with flour. Add flour mixture 1/4 cup at a time until mixture is the consistency of dough. Amount of flour will vary based on humidity. If you use too much, dumplings will be grainy. Flour bread board. Using 1/2 cup at a time of dough, roll into a log 1 inch thick. Cut roll into pieces about 3 inches long. Set aside while water comes to boil; salt water. Add no more than 10 logs at a time. Stir once so they don't stick to bottom of pan. Reduce heat to med high so water boils but does not boil over. Cook for about 5 minutes. Drain on plate while cooking remaining dumplings. Serve with gravy or butter.
