I have a fast, easy recipe....6 medium size potatoes, 1 medium onion cut in medium 3 inch wedges. Place in food processor and on high for 20-30 seconds (should look like you grated not shredded), add to large bowl, add in 2 beaten eggs, 1 tsp of baking powder and 1/2 tsp baking soda, salt and pepper to taste, add 1/4 cup of matzo meal until everything is combined.....add more matzo meal if still loose. I am not one that usually measures anything. Fry in oil until golden brown! Good luck. My potato latkas come out crunchy outside and fluffy inside.
