5 lbs. of potatoes peeled (I use red potatoes, but they don't discolor as easily)
1/2 cup of flour
3 eggs
salt and pepper
Grate the potatoes in in food processor first on the grating disk and then a second time through with the blade. Do not over process them or they will be too watery. I usually just put them through the blade for a few seconds. Mix with the remainder of the ingredients. Cover bottom of frying pan with oil (don't skimp) and heat the oil. Drop in the mixture and fry! I usually test the oil with a little mixture, when it starts to sizzle you know the oil is hot enough. Place the latkes on a paper towel on a cookie sheet to drain. You can keep warm in oven @ 200ยบ till ready to eat.
Make sure oil is HOT or outside will burn and te inside will not cook through!
