From Manny's Chicago Deli
Shred coarsely 4 cups of Potatoes.
Shred coarsely 1/2 cup Onion.
Combine Potatoes and Onion in colander, pressing out as much moisture as possible.
Dry as much as possible with paper towels.
Lightly beat together:
- Potato mixture
- Eggs
Stir in:
- Salt
- Pepper
- Flour
- Baking Powder
Let sit for 5 minutes.
In heavy skillet, melt Butter over medium-high heat.
Add Vegetable Oil.
Drop Potato mixture into skillet in 2 tablespoon portions; don't let them touch.
Use a wooden spoon to slightly flatten. Do not make too thin.
Fry about 2 minutes until golden brown.
Flip and fry 1 minute more.
Use slotted spoon to remove and drain on paper towels.
Serve with sides of Sour Cream and Apple Sauce.
