Great winter soup
Melt butter in large pot. Cook onion gently 5 minutes, add leeks and potatoes, stir well.
Cover pot and cook over low heat 10min., stirring well after 5 minutes.
Pour in stock and cook over low, covered until potatoes are very tender, approx. 30 mintues.
Puree.
