1. Boil Potatoes
2. Make Sauce - Mix Sugar, Soy Sauce, and Mirin in a bowl. Mix Potato Starch and water to make a slurry. Over MEDIUM HEAT cook soy sauce mixture until boiling. Add in slurry and stir until thick.
3. Mix Potato Starch into potatoes and knead until smooth. Roll into Mochi balls.
4. Saute in oil until crispy on both sides.
5. Serve with Sauce and Nori pieces.
