In a sauce pan, pour water, add rock salt, chopped potatoes and let boil for 10 minutes.
Strain and pour cold water over it.
In a frying pan, saute garlic and onions.
Add potatoes until soft.
Turn off flame and let it cool.
In a mixing bowl, beat eggs, add a dash of pepper and add potato mixture.
In a frying pan, heat 1 tsp of olive oil, pour mixture and cover.
When omelet is a little dry, turn it around, using another pan and cover.
