Easy to make
Place the potatoes and 1/4 tsp of the salt in a saucepan and cover with water. Bring to a boil, then reduce th eheat and simmer until the potatoes are just tender.
Drain the potatoes thoroughly and reserve 1 tbsp of the potatoes. Cooke the remaining potatoes in 2 tbsps of the butter in a skillet until golden brown, stirring frequently, then remove from the skillet. Drian on paper toweling and keep warm. Cook the bacon in the same skillet until crisp, stirring frequently, then remove from the skillet.
Drain on paper toweling and keep warm. Place the eggs in a bowl and beat lightly with a fork. Stir in the reserved potatoes, parsley, remaining salt and white pepper. Cook the omelet. Place on 1/2 of a heated platter. Mix the potatoes and bacon and place on the other half of the platter. Garnish with parsley.
