Boil potatoes in jackets. Peel while hot, and mash them with a fork. Add the potato seasonings, mix, and divide roughly into ten patties.
Boil peas for 2 mins. Drain, rinse under cold water, drain again. Mix peas with other stuffing ingredients. Mash lightly and divide into ten parts.
Beat eggs in a shallw dish. Put crumbs in separate dish. Mix crust seasonings in crumbs and mix.
Put one part of stuffing in the center of one of the patties. Fold the potato mixture to form a rough ball. Flatten gently and form a neat patty, about 2.5 in across. Dip patty in beaten egg and then crumbs. Set aside. Prepare all patties this way.
In skillet over lowish flame, heat enough oil to cover the bottom with about 1/8 inch. Put in as many patties as the skillet will hold in a single layer and fry until the bottom turns a nice reddish color. Flip and cook second side the same way. Remove with slotted spatula. Fry all this way, serve hot.
