This is a simple all purpose potato roll recipe, it's very moist, tender, and delicious.
In a mixer bowl, using the dough hook, combine the flour, yeast, sugar, salt and potato flakes, in first speed (if it doesn't look like it is combining then I just get in there and use my hand to mix it up). Heat the milk in the microwave just till warm ( about 45 seconds), then pour into the flour, then add the oil. In the cup that the milk was in beat the egg in that. Start the mixer and mix on first again, and gradually add the egg. Scrape down the bowl to get the flour going in, then move the speed to medium, let mix for 5 minutes, (if dough sticks to the sides after 5, I just use a spoon to scrape down and mix about a 1 minute more. Remove from the bowl it will be soft, place on a flour counter, divide in half, then each half into 6 pieces. Now you round them up and place onto a greased 1/4 sheet pan. Let rise in a warm place for about 45 minutes. Bake in a preheated oven at 350 for 15 minutes, remove from oven and brush with melted butter. Let cool, remove from pan, these keep well stored in a baggie.
