Mom's potato salad, easy to make but always one of my favorites.
Peel and cube the potatoes, keep warm
Blend mayonaise, sugar and vinegar, add all the chopped veggies, then stir in warm cubed potatoes.
Stir till all the potatoes are covered with mayo mixture, can always add a little more mayonaise if it's too dry.
Top with egg slices and sprinkle on paprika.
Note: for those who like egg in the salad, chop one (or more) cooked eggs and gently stir in after all the ingredients have been mixed together.
The key to the flavor is mixing in the vinegar mixture while the potatoes are still very warm. They seem to absorb the sweet/sour flavors better when warm.
