Wash and dice potatos, add to large pot of salted water, boil for 20 min or until soft but not mushy, drain. Put into a large bowl, while still warm add vinegar and celery seed, toss gently, set aside.
Cut up 5 eggs, onion and celery, add to bowl. Mix mayonnaise, mustard, salt and pepper. Add onion and celery to bowl, pour in dressing, toss gently. Refridgerate and keep chilled. Put egg slices on top sprinkle with a bit of Paprika, for color. Serves large group at potluck.
Use cider vinager not white, rice or wine.
