Use leftover baked potatoes.
Preheat oven or toaster oven to 350 degrees. Cut flat top and bottom off of leftover baked potatoes, taking care to leave some pulp in each potato skin. Scoop out a bit of the pulp, leaving about 1/4 inch against the skin all of the way around. Brush olive oil all over potato skin (front and back, top and bottom). Sprinkle with salt and pepper. Fill skins with cheese and bacon bits. Bake at 350 for 15 to 20 minutes... until skin is crispy. Remove and sprinkle with diced green onions if desired. Serve with sour cream.
