Using Sautés function on Insta Pot. Add butter and onions and sauté for 3 minutes, add garlic, carrots and celery to sauté for another few minutes. add potatoes, chicken stock, parsley, salt and pepper to sauted vegetable mix. Secure lid - cook high pressure for 5 minutes. Either Quick or Slow release. Turn insta pot to Sauté and add cream cheese, shredded cheddar and sour cream, constantly stirring until cheeses melt. Serve with bacon crumples sprinkled on top.
