My 2 cents! Hubby planted a LOT of collards this year and I've never gotten much of a "liking" for them even though I love spinach and chard. He pestered me about adding some to some potato/sausage soup so I gave in. I was quite surprised. I have "no problem" with them as long as the pieces are small. So if you're not sure about greens in your potato soup, start with a small amount cut small and you may enjoy it while getting extra vits & mins.
In Dutch oven, saute onion and garlic in oil. Add broth and potatoes. Boil.
Cover; reduce heat to simmer 20 to 30 minutes. Add sausage and pepper.
Simmer for 15 minutes. Add greens and simmer 10 minutes or until tender.
Stir in half and half. Heat through.
